HACCP es un sistema de control de la seguridad alimentaria, que actúa como proceso analítico en el que se adoptan medidas preventivas para reducir los riesgos. HACCP puede definirse como un grupo de principios para el establecimiento de criterios y sistemas de control adecuados diseñados para proporcionar a los consumidores productos seguros. En general, es necesario evitar todas las situaciones que puedan conducir a la contaminación de los productos y reducir o eliminar las causadas por el proceso de producción.
